Growing up together on Tuscan shores, they were always the ones people noticed and admired for their openness, generosity, and grace.
As they drifted from pastel idylls to travel the globe, their tastes broadened, their stories deepened, yet their instincts stayed the same. With every return, their presence grew ever more charming. In perfectly manicured hands, they held the world.

Jason Atherton is a 2 Michelin starred world-renowned chef known for his passion for refined cuisine and culinary innovation. With a career decorated with accolades, Atherton brings a touch of elegance to his dishes, combining fresh, local ingredients with modern cooking techniques.
His creative vision and commitment to quality make his restaurant a must-visit culinary experience, perfectly aligned with the exclusive atmosphere of Marias Forte Dei Marmi.
He is an Executive Chef whose international journey has led me to work in some of the most demanding and inspiring kitchens across Italy, London, Dubai, and San Francisco. His vision began in Southern Italy, in his family’s hotel, where he learned early on that food is never just food but it is care, identity, and hospitality.
After training at Boscolo Etoile Academy, he built his experience in leading restaurants such as Maze, Pollen Street Social, Marina Social Frantzén, Pure C, Accursio, and Quince, working in environments defined by the highest standards, intense pace, and the kind of precision and discipline that truly shape a chef.
Today he is the Executive Chef of MARIAS, the new project developed together with Chef Jason Atherton at Hotel Principessa in Forte dei Marmi, part of Autograph Collection Hotels by Marriott. His role is to shape a seasonal, Mediterranean, product-driven culinary identity that is deeply connected to its place, while supported by strong systems, international standards, and a clear team culture.
Giacomo is from Milan and began his journey in a restaurant during his study at the local hospitality school, working in local restaurants and pizzeria. Once finished the school in 2013, he started working at Joia restaurant, the first European vegetarian Michelin starred restaurant, where he spent his 4 years, starting as commis waiter and leaving as Assistant Restaurant Manager. Following this experience he moved to Tuscany, and worked as a Restaurant Manager for 2 years.
He decided to move to London for Alain Ducasse at the Dorchester. In January 2022 Giacomo joined The Social Company as Head Waiter at Pollen Street Social, where he climbed his way up to General Manager position. Then he worked as the general manager of Sael for 1 year since the opening.
Now he brings his expertise and knowledge of the area to Jason Atherton's new expansion in Italy, Marias Forte Dei Marmi.

A small send-off for the evening wander
Along with the delivery of the bill, the table receives a small linen pouch of candied almonds intended to accompany them on the town’s twilight tradition of la passeggiata. An illustrated card of Forte dei Marmi sits alongside it, marked with the classic evening route from the hotel to the pier and the market streets. The card doubles as the bill holder, made to slip easily into a pocket or bag as guests step out into the night.
It’s a simple gesture that ties the end of dinner to the traditions of the town with a little sweetness for the walk, a map to follow and a gentle prompt to join the locals in the rituals that make Forte what it is.
